Kodiak Protein Cake Muffins Recipe


I'm super excited to share with you my latest creation, my all-time favorite Kodiak Protein Muffins! 🧁💪. There's more to this than just a recipe - it's a piece of my personal journey! 💫 Some of you might know that I've embarked on a transformational health journey, shedding a 70 pounds along the way! And you know what's been one of my secret weapons? These delicious protein-packed muffins! 🎉

From the blue agave sweeter, to the large box of Kodiak Power Cake mix,  to the large vanilla flavoring, to the large boxes of butter!  I'm all about cooking at home to save money and to reduce my waistline. 🛒🍴


Whether you're a seasoned baker or a kitchen newbie, I promise you'll find this recipe simple, delicious, and nourishing! 🌿 For me, these muffins aren't just about fueling my body - they're about celebrating how far I've come and embracing the journey ahead. 🌟

RECIPE 

4 Cups Kodiak Power Cakes Mix (1 package) in a two package Costco size box

1.5 cup almond milk  (or milk or your choice)

1 cup sweeter (I love the low gylcemic blue agave)

1/2 cup butter melted

2 Eggs

2 TSP cinnamon 

2 tsp vanilla 

1 cup greek yogurt vanilla (I prefer full fat but you can use any variety)

I large basket of raspberries to garnish on top

DIRECTIONS

Preheat oven to 350 degrees.  Spray 2  - 12 cup muffin tin with pam (or the brand of your choice).

Combine all ingredients in a bowl except for the raspberries, and mix until well blended.  Fill each cup 3/4 full.  Divid the raspberries evenly to the tops of the muffins when you are done pouring mixture into the tins, 

Bake 350 for 18 minutes or until light brown on top.  

Remove from the muffin tin to allow to completely cool! Enjoy! 

I store 1/2 of the recipe in the refrigerator, and 1/2 in the freezer.  When I am ready to eat one, I put one in the microwave for about 20 seconds.   They are so moist, they don't need any butter... they are great just as they are!!

Protein per muffin ≈  6g
